Keto Maple Bacon Donuts

The perfect Keto wake up call

Studded with crisp bacon pieces, these delicious maple donuts will quell any craving.

Studded with crisp bacon pieces, these delicious maple donuts will quell any craving.

Chock full of scrumptious maple flavor, these beautifully textured donuts will solve all of your morning woes. I wanted to create a recipe that held up to all of my favorite donut shop fantasies. Believe me, these do!

I tested out both silicone molds and traditional stainless steel and found that the best donut mold for me was the stainless steel model. Unfortunately, the silicone curved inward a tad at the edges and time after time tore my donut as I tried to remove it.

The combination of almond flour and coconut flour makes these beauties tender and moist. Go ahead and liberally sprinkle cooked crumbled bacon on top and you will have something dreams are made of.

  • 1 1/4 cups Anthony's  almond flour*

For The Glaze

  • 1/4 cup grass-fed butter
  • 1 tsp vanilla extract
  • 1/4 cup granular Swerve Sweetener**
  • 2 T Sugar Free ChocZero Maple Syrup*
  • 1/2 tsp maple extract
  • 1/4 tsp sea salt
  • 3 pieces cooked bacon, crumbled

instructions:

How to cook Keto Maple Bacon Donuts

    1. Preheat oven to 350 degrees F with rack in center position. Lightly brush the inside of your nonstick donut pan with coconut oil.
    2. In a mixing bowl combine coconut milk, coconut oil, eggs, Sugar Free Choc Zero Maple Syrup, maple extract and vanilla extract, stirring until well combined.
    3. In another medium sized bowl, sift together the coconut flour, almond flour, baking soda and sea salt.
    4. Mix the dry ingredients into the wet ingredients until a thick batter is formed.
    5. Fill a piping bag or large ziplock with the batter. Cut the end of the bag and pipe dough into indentations in greased donut pan. Each donut should be about 3/4 full. Tap the pan lightly on the counter to remove any air bubbles.
    6. Bake for 20-22 minutes on center rack. Donuts will brown and skewer inserted will come out clean.
    7. Let cool for 5 minutes and carefully tip out of pan onto a cooling rack. Should be completely cooled before glazing
    8. To make glaze, combine butter, heavy whipping cream and Swerve in a small sauce pan. Bring to a simmer and allow the Swerve to melt. Add in the Vanilla, Sugar Free Choc Zero Maple Syrup and sea salt to combine. Simmer for 2-3 minutes. Remove from heat. Glaze will thicken as it cools, so you have the option for a thicker or thinner glaze on your donuts depending on the consistency of glaze when they are dipped.
    9. To glaze cooled donuts, dip rounded tops of donuts into the maple glaze. Twist as you remove donut to leave excess glaze behind. Immediately top each one with some crumbled cooked bacon pieces. Allow to rest on rack, glaze side up, until glaze solidifies. Store in single layer in an air-tight container in the refrigerator.
    10. Eat. Enjoy. Repeat.

    NOTES:

I use Sugar Free Choc Zero Maple Syrup because it has a great taste and texture, but another sugar free maple syrup of your choice would work just fine I prefer Swerve for this recipe because it provides just the right level of sweetness to the glaze. You can increase or reduce the amount of Swerve to your taste or substitute for any 1:1 sugar free sweetener of your choice. *I have provided easy links below for the Keto baking products that I love to use. Adding a batch of these warm muffins scented with cinnamon and cardamom to your breakfast table will make you the most popular person in the room. Light and soft with a crisp crumbly top, they pair perfectly with your latte to get your day off to a great start. I love adding the cardamom for that extra dash of spiced warmth.
