Keto Bacon And Gouda Biscuits
Let’s be honest, the need for a good buttery, cheesy biscuit while on Keto is real. Buttered hot out of the oven to serve with soup or toasted and loaded with eggs, cheese and bacon, these beauties deliver every time. I even omit the bacon sometimes and make them into minis so I can top with herbed cream cheese, smoked salmon and capers for a beautiful party appetizer.

Keto Gouda Bacon Chive Biscuits
The smell of buttery cheesy biscuits baking in your oven will have everyone in your home anxiously waiting for them to emerge. If you have the willpower to wait, they are wonderful paired with soups, salads, or split in half and piled high with your favorite ingredients.

ingredients:
- 1 1/2 cups Anthony's almond flour*
- 2 tsp baking powder
- 1/2 tsp sea salt
- 1/2 tsp garlic powder
- 1 cup shredded aged Gouda cheese
- 2 slices cooked bacon, chopped
- 1 T fresh chopped chives (or 1 tsp dried chives)
- 1/4 cup sour cream
- 2 T grass fed butter, melted and slightly cooled
- 2 medium eggs, whisked

How to cook Keto Gouda Bacon Chive Biscuits
- Preheat oven to 400 degrees F
- Line a baking tray with parchment and set aside
- In a medium sized bowl, sift in almond flour, baking powder, sea salt and garlic powder
- Add cheese, bacon and chives to dry ingredients and toss to distribute evenly
- In a separate medium sized bowl, combine sour cream and butter and incorporate eggs one at a time
- Add dry ingredients into wet and mix to combine
- Let batter rest for 5 minutes so that flours can hydrate and batter can firm up
- Scoop 10 large tablespoonfuls onto your parchment lined baking sheet, leaving 2" between each biscuit. Use wet fingers to shape dough into even rounds if you wish.
- Place in oven and bake for 12-14 minutes until tops are golden brown
- Remove from oven to a rack and allow to cool
NOTES:
I love the combination of Gouda, bacon and chives in this recipe, but they could just as easily be made with ham and Swiss, Jack and jalapeño, or cheddar and dill.
The base recipe remains the same and your imagination can go from there.
